Stanford Hospital and Clinics Registered Dietitian, Heather Schwartz, recommends this comfort food that’s not only tasty for the senior palette—offering your taste buds a tantalizing dance of salty, savory, sour, bitter and sweet—but also a healthy fall chicken soup to help keep you warm as the leaves change colors.

Crock Pot Chicken Tortilla Soup

According to Heather Schwartz, RD, this recipe is a “great one for crock pot chicken tortilla soup. It’s chock full of high-quality protein, high in fiber, a great source of lycopene for healthy eyes and is simply delicious!” Heather mentions that she likes to add “a few slices of avocado, a tablespoon of low-fat Greek yogurt or a dollop of low-fat sour cream on top.”


Ingredients

  • 4 boneless chicken breast (cut into bite size pieces)
  • 30 ozs black beans
  • 30 ozs tomatoes
  • 1 cup salsa
  • 4 ozs green chilies (diced)
  • 14 12 ozs tomato sauce
  • guacamole (optional)
  • tortilla chips (optional)
