Need tips on how to move mom with stage 3 dementia to assisted living

My siblings and I are moving mom to assisted living. Mom has visited, eats lunch there, and enjoys the residents. We talk about it one day and she agrees but the next day she forgets or refuses. Should my sister take her out for the day and my brother and I pack, move, and set up new home?

NO! You cannot do that without her permission. To do so you would have to have guardianship. That would be mean and border on abuse. She might never speak to you again. Speak to the assisted living and ask for help. If no other choice seek guardianship and do it then.
