I am not a dietician or dementia expert but I thought you may be interested in a blog article we have that discusses coconut oil among other things that may be helpful. The article is titled Improve Your Memory with Super Foods for Brain Health.

The Alzheimer's Association website offers a good variety of resources on natural and drug related management of the disease process. It also clearly notes there is no present 'cure' for Alzheimer's disease. This link will guide you to the treatment (both drug and natural) information they share with families:

I did a quick review and noticed that the alternative treatments listed do not include any information on coconut oil. I found this on an affiliate website: It speaks directly to those using coconut oil for overall brain health. It may be of insterest to you as well.

I wish you and your family memories to last a lifetime!
