How do I cook for a diabetic?

Dad is a newly diagnosed diabetic, how do I make his favorite holiday dishes with out messing up his blood sugar?

My husband is diabetic, the trick I learned is to make recipes having similar flavors rather than trying to make old recipes taste the same. For example instead of pumpkin pie I found a recipe for pumpkin sorbet which uses much less sugar. Stuffing can easily be made using whole wheat stale bread instead of store bought, whole wheat is lower on the glycemic scale. Most recipes also work well if you use a sugar substitute but check the directions to make sure it is a one to one substitution.

Doctors will tell you to stay away from any white foods or processed foods. Look at labels, always make sure carbs and sugars are low. There are tons of websites for diabetic recipes that are yummy.
