Crock Pot Chicken Tortilla Soup
According to Heather Schwartz, RD, this recipe is a “great one for crock pot chicken tortilla soup. It’s chock full of high-quality protein, high in fiber, a great source of lycopene for healthy eyes and is simply delicious!” Heather mentions that she likes to add “a few slices of avocado, a tablespoon of low-fat Greek yogurt or a dollop of low-fat sour cream on top.”
